  • 1 1/2 CUP QUINOA
  • 3 CUPS WATER
  • 250 G PUMPKIN
  • 1 ONION
  • 1 ZUCCHINI
  • 1 TBSP TURMERIC
  • 1 TBSP SALT
  • 2 TBSP CHEESE
  • 1 TBSP PEPPER
  • 1 CAN TUNA
  • 1 TBSP FRESH PARSLEY
  • 1/2 CUP OLIVE OIL
  • 2 TBSP LEMON JUICE

Instructions
 

  • 1.RINCE THE QUINOA UNDER COOL WATER .PUT RINSED QUINOA IN A MEDIUM SAUCEPAN .ADD WATER,SALT ,TURMERIC .BRING TO BOIL OVER HIGH HEAT .REDUCE HEAT TO LOW ,COVER AND SIMMER FOR SOME MINUTES UNTIL QUINOA IS FLUFFY .REMOVE FROM HEAT AND LET STAND ,AND LET COOL .
    2.SLICE THE ONION INTO STRIPS ,CUT PUMPKIN AND ZUCCHINI INTO CUBS .CHOP PARSLEY.
    3.IN ALARGE SKILLET HEAT OLIVE OIL AND THE ONION UNTIL GOLDEN ADD PUMPKIN AND ZUCCHINI ,SEASON WITH SALT AND PEPPER STIR AND FRY UNTIL SOFT .
    4.PLACE THE QUINOA IN A LARGE BOWL ,ADD THE CRUMBLE CHEESE ,DRAINED TUNA ,FRESH PARSLEY .SQUEEZE FRESH LEMON JUICE ,DRIZZLE OLIVE OIL .MIX ALL .
