1 tablespoon olive oil
2 celery ribs,chopped
2 red potatoes cut in cubes
3 cups frozen mixed vegetables
1/2 teaspoon pepper
1/2 teaspoon dried thyme
2 cartons reduced sodium chicken broth
2 cups coarsely shredded cooked chicken
2 cups biscuits
2/3 cup milk
Heat oil ,saute celery and onion ,stir in potatoes ,mixed vegetables ,seasonings and broth ,bring to a boil ,reduce heat,cook ;cover until cooked .
Meanwhile ,stir bakinfg mix ,add milk until a soft dough forms,cook cover until a toothpick inserted in dumplings comes out clean .
