ingredients
1 Potato peeled and cubed
2 Packages active dry yeast
1/4 cup warm water
2cups warm milk
1/2 cup softened butter
3 EGGS
Lemon extract
1cup sugar
salt
10 cups white flour
COFFEE GLAZE:
6 Tablespoons cold milk
1 Tablespoon instant coffee granules
vanilla extract
3/4cup butter softened
6 cups sugar
dash salt
oil frying
how to do it ?
1 Place potato in a medium saucepan,add water to cover, cook ,drain.
2 In a large bowl dissolve yeast in warm water,add milk butter, potato,eggs and 3cups flour ,beat until smooth;stir in enough remaining flour to form a soft dough.Cover and let rise in a warm place until doubled,about one hour.
3 Stir down the dough,on a well_floured surface,roll out ,place on greased baking sheets,cover and let rise for 45 minutes.
4 Meanwhile ,for glaze,combine 6 tablespoons milk,coffee and vanilla ,stir to dissolve coffee ,in a large bowl,beat butter, sugar,salt,add milk .
5 In an electric skillet or deep_fat fryer,heat oil :fry donut dip tops with glaze while warm.
