1 Shell the coconut beans and set aside. Cut the onion, garlic and peeled and seeded tomatoes into small cubes. In a pressure cooker, put the meat cut into small pieces, onion, garlic and tomatoes, pour in olive oil, spices, tomato coulis and coriander. Sauté for 5 minutes.
2 Cover with water and cook, covered, for 20 minutes over medium heat. Then add the beans to the meat, close the casserole dish and cook for 15 minutes. Reduce until the sauce thickens.
