Waffles with potatoes and smoked salmon


  • 400 g of potatoes
  • 2 eggs + 1 yolk
  • 125 g heavy cream
  • 125 g of fresh goat cheese
  • the juice of 1 lemon
  • 4 slices of smoked salmon
  • dill
  • salt pepper


1Peel the potatoes and grate them finely. Wring them out well to remove the excess juice.
2Beat the whole eggs and the egg yolk. In a salad bowl, mix the crème fraîche with the grated potatoes and the beaten eggs with a fork. Salt and pepper. Reserve in the fridge.
3In a salad bowl, put the fresh goat cheese, add the lemon juice and dill. Mix and garnish each slice of salmon with this preparation.
4Heat the waffle iron, lightly grease it and make the waffles. Cook each waffle for 4 to 5 minutes.
To finish
On each plate, place a waffle and a roll of salmon and goat cheese.
