Carpaccio-style salmon

Ingredients
  

  • 4 salmon fillets (1 per person)
  • 1 bar of fish broth
  • 4 tablespoons of olive oil
  • 1 lemon
  • 1 teaspoon of dill or basil
  • sel et poivre

Notes

1 Poach the fish for a few minutes in the broth, it may remain pink. Drain and set aside to cool.
2Prepare the marinade with the olive oil, juice of half a lemon, dill, salt and pepper.

Place the pieces of salmon (which come off on their own) on the serving dish and sprinkle them generously with the marinade. Let stand at least 1 hour before consuming.
To finish
Slice the rest of the lemon into pretty rounds and use them to decorate the dish.
