Apple tartlet crumble
Ingredients
- 100g Plain flour
- 100g Sugar
- 75 g Butter
- Almond Powder
- 4 Apple
- 20 cl sour cream
- Ice Sugar
- 1 Tonka bean
- Elderflower syrup
Notes
1Mix 100 g of flour with 75 g of sugar, 75 g of softened butter, 3 tbsp of ground almonds. Roll out the resulting dough to a thickness of 3 mm. Garnish with small silicone molds Bake for 10 minutes in the oven at 180 ° C. Let cool.
2Peel the apples and dice them. Brown them in 25 g of butter and 25 g of sugar for about ten minutes.
To finish
Whip the cream with the icing sugar in Chantilly. Present a tart base on each plate. Place a pastry ring of its size and fill it 3/4 full with apples. Cover with Chantilly, gently remove the circle. Sprinkle with grated tonka bean and a little sugar. Add a tbsp of elderflower syrup around each tart.
